This position is primarily responsible for cleaning and sanitizing dishes and the dish room areas. Additional duties include general cleaning duties and store room duties as assigned.

DUTIES

  • Set up dish machine according to ServSafe standards
  • Fill pot sinks and check the sanitizer solution for accuracy. Enter the correct sanitizer results on the posted checklist
  • Wash all dishes, glasses, silverware, pots, pans, etc.
  • Maintain work area in a clean-as-you-go condition to ensure safety and sanitation
  • Empty trash cans continuously as needed throughout the work day
  • Pick up and remove food items, dirty dishes, trash etc. from the cafe as needed throughout the work day
  • Clean and organize the dish racks and pot racks into a neat and orderly manner throughout the work day
  • Return clean dishes and pots to proper storage areas
  • Deliver and pick up room service trays as needed
  • Soak, wash and sort silverware. Put clean silverware into storage containers with the handles upwards according to ServSafe standards to prevent contamination
  • Sweep and mop all floors in the kitchen, offices and food storage areas as needed throughout the work day
  • Drain and fill with clean water the dish machine every 4 hours
  • Drain, clean and disassemble the dish machine at the end of the night to ensure proper sanitation and working conditions of the machine
  • De-lime and de-scale the dish machine 3 times a week to ensure optimal working order of the machine
  • Drain, clean and re-fill the pot and pan washing sink every 2 hours
  • Drain, wash and clean the pot washing sink at the end of each night to ensure proper sanitation
